Salmon Bruschetta

Whenever we think of Italian cuisine, an immense number of dishes made from pasta, tomato, cheese and wine come to mind, but the reality is that it is much more than that, Italy has one of the most famous cuisines in the world. Starting with the favorite of many, «Pizza», to some of the richest desserts such as «tiramisu». But let’s not go to the complicated, first we can start with one of the favorite entries of many.

Bruschetta is one of Italy’s most famous antipasti, the basic bruschetta consists of a piece of grilled bread rubbed with garlic and topped with olive oil and salt. There are a few variations that can include tomato toppings, grilled or fresh vegetables, cured meat, or cheese.

History:
Bruschetta originated in Italy during the fifteenth century. However, there are some documents that say that the origin of the dish dates back to Ancient Rome, when olive farmers would take their olives to a local olive press and taste a sample of their freshly pressed oil using a slice of bread to check the quality and flavor.

Recipe:
This recipe is perfect for those summer afternoons where we can enjoy a dish full of flavor and freshness, accompanied by a white or rosé wine.

Ingredients:
Bread slices
Smoked salmon. – 90 grams
Cherry tomato – 20 gr
Olive oil. – 15ml
Cream cheese – 60 gr
Chives – 10 gr
Capers – 5 g
Salt – 3 gr
Pepper – 2 g

Process:
Place the slices of bread on the grill with a little olive oil, until golden brown.
Cut the cherry tomatoes in half and reserve.
Finely chop the chives and capers and incorporate them with the cream cheese, salt and pepper until a homogeneous mixture is obtained.
Once the bread is golden, spread a little of the mixture all over the surface and then place some thin slices of smoked salmon and decorate with a little cherry tomato, chives and olive oil.
Serve.
